Bread is the staple food of many Tuscan recipes, such as Panzanella, a very poor and simple dish, that does not require cooking; it was consumed by farmers in the fields while they worked and remained outside all day.
The main ingredients together with stalebread (500 gr, at least a 4-day-bread) are vegetables: 2 ripe tomatoes, 3 red onions, 1 basil bunch, extra virgin olive oil, vinegar, salt, pepper and 1 cucumbers.
Cut the sliced bread, and soften in water. Squeeze the slices removing the water in excess, and put them in a bowl.
Chop into smal pieces the tomatoes, cucumber, basil and make sliced thin onions. Season with oil, vinegar, salt and pepper as you wish, and leave at least an hour in the fridge before serving.
